Friend Makin Monday

This week, I wanna see if you would share with us one {or more} of your favorite winter recipes!

These are 2 of my personal favorites!!



Turkey Chili Frito Pie

Ingredients

1 lb Ground Turkey
1 diced onion
1 diced bell pepper(any color)
3 chopped garlic cloves
1 15oz can of diced tomatoes (I like the ones with basil, garlic and oregano) (I also buy these in generic-- I have found no taste or quality difference)
3 cans of beans with liquid (I use 1 can each: chili, black and light red kidney beans)(generic also)
Chili powder
Cumin
Garlic powder
Salt
Pepper
1 bag of Frito's - This is enough for my family ( we make 2 adult bowls and 4 kid's bowls)
Yumminess Additions: Cheddar Cheese, Raw Chopped Onion and Yellow Mustard


1. Put ground turkey in large pot. Break up with wooden spoon and cook until done.

I use my Le Creuset (that I got from an outlet store for $45.00) sorry had to throw that in there!! Looks like this one but is a gray color!


2. Add in onion, bell pepper and garlic and cook until soft.

3. Add spices and salt and pepper. I learned to cook with Rachael Ray...so I don't really have any measurements...umm I pour half a palm full of chili powder and slightly more for the cumin. (don't laugh--that's how she does it...so that's how I roll!!) I just sprinkle a little salt and pepper--use your best judgment.

4. Mix in tomatoes and beans with liquid. Cover with lid and bring to a boil. Simmer for about 12 min or so....

Now for the fun part--assembly of Frito Chili Pies...

I wish I had a fun graphic for this part...but you will just have to image the yumminess, OK?

Place a handful of Frito Lay Chips in bowl (you have to use a bowl--this gets messy on a plate--you don't want spillage!!

Ladle some chili on top of that-- I use 2 for mine and 1 for the kids.
Sprinkle with Shredded Cheddar Cheese, raw onions and then top with a squirt of Yellow Mustard!! Oh My Yumminess!! This is really Good!!

For those of skeptics out there who are afraid of using turkey in the place of ground beef...I promise you won't know the difference! My husband knows this from experience!! I did the ol' switcheroo on him and he was none the wiser until I let him in one my secret as he was getting seconds!! I know sly, right?

My other favorite is Rachael Ray's Spaghetti and Meatball Stoup!!

  3. I will have to try that RR recipe. I love her recipes and I bet my kids would especially like that one.

    I love your pot and I hope to get one. I need to check the outlet. I am going to make your Frito Pie. My husband loves getting the one at Sonic.

  4. That sounds really good? It kind of reminds me of what they serve at football games, except it's all mixed into the little Frito bags. I've never had it, but my son told me it's really good.

  8. My FAVORITE any time is FRITO PIE...
    But here's my recipe...
    1-2 lbs. lean ground beef
    1 container frozen hot red chili or
    1 pkg. dried red chili pods
    1 pkg. cheddar cheese I like sharp

    fry meat
    add frozen chili add 1 cup and simmer if it seems to thick add another cup of water and simmer.
    If using dried pods...
    break of stems
    shake out seeds and discard
    throw them into a large pot of water and simmer till soft.
    Place chili's, salt, garlic and 1/2 - 1 cup water. Add this to meat add more water if too thick.
    Simmer for about 45 minutes.
    Taste and add salt as needed.
    Place original size fritos in a bowl.
    Top with chili then with cheese.
